Strawberry Spinach Salad



Very good salad with fruit, nuts and its own wonderful dressing.

Ingredients:

2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/4 cup white sugar
1/2 cup olive oil
1/4 cup distilled balsamic vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced red onion
Feta Cheese
Bacon Bits
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
1/4 cup almonds or walnuts, blanched and slivered

Directions:

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Put in blender and puree then Cover, and chill for one hour.

In a large bowl, combine the spinach, strawberries, feta cheese, bacon bits and almonds/walnuts. Keep dressing separate until eaten.

Substituting Honey for Sugar

To substitute honey for sugar in recipes, start by substituting up to half of the sugar called for. With a little experimentation, honey can replace all the sugar in some recipes.

Left Over Halloween Pumpkins:

Scoop out seeds and strands if using a new pumpkin. Stand pumpkin upright and cut down the middle. Halves should be able to fit on a baking sheet. Place one half pumpkin, or two if they fit, cut side down on the baking sheet. You may sprinkle a little water on the sheet first. Bake at 350F for 30-60 minutes, depending on the size. When done, the skin darkens and the pumpkin begins to collapse. Check for softness with a fork or knife. It will go in easily if done. Remove from oven, cool about 20 minutes. Scoop pumpkin flesh away from skin. Discard skin then puree in food processor.

No More Water

Instead of the water your recipe calls for, try juices, bouillon, or water you've cooked vegetables in. Instead of milk, try buttermilk, yogurt or sour cream. It can add a whole new flavor and improve nutrition.
